2 28 oz cans diced tomatoes
1 15 oz can artichokes
2 C chicken broth
1 onion, quartered
2 garlic cloves, smashed
2 tsp dried basil
1 tsp kosher salt
Combine all ingredients in slow cooker. Cover and cook 8 hours on low. Puree soup in batches and stir in ¼ tsp ground black pepper. Makes 8 cups.
